Brown Sugar-Topped Cinnamon-Sugar Coffee Cake with Vanilla Cream Cheese Glaze
Ingredients:
Brown Sugar Topping
- 1/4 cup unsalted butter, softened (half of 1 stick)
1/4 cup light brown sugar, packed
3 tablespoons Gold Medal All-Purpose Flour
1 teaspoon cinnamon
Cake
- 1 cup Gold Medal all-purpose flour
3/4 cup granulated sugar
2 teaspoons baking powder
1 tablespoon cinnamon (yes tablespoon, not teaspoon)
1 teaspoon ground nutmeg
pinch salt, optional and to taste
1 large egg
1/2 cup buttermilk (or Powdered Buttermilk, use 2 tablespoons with the dry ingredients + 1/2 cup water added with the wet)
1/3 cup vanilla Greek yogurt (plain Greek yogurt or sour cream may be substituted)
3 tablespoons canola or vegetable oil
2 teaspoons vanilla extract
Vanilla Cream Cheese Glaze, optional but recommended
- about 1/2 cup confectioners’ sugar
2 tablespoons cream cheese, softened (light cream cheese is okay; 2 tablespoons butter may be substituted)
1 teaspoon vanilla extract
splash cream or milk, as necessary
