Cashew Shortbread Cookies
Ingredients:2 1/4 cups all-purpose flour
1/2 cup cashews
2 sticks (8 oz) unsalted butter (left to rest out for about 10 minutes- you want it slightly softer, but not room temp.)
1/3 cup sugar
2 teaspoon vanilla extract
pinch of salt
powdered sugar (optional)
